Hi! I’m Brittnay or Britt from The Nut Butter Hub. I work in HR by day and currently contribute to Empowered Wellness, Honest Cooking & The Huffington Post by night. However, my passion lies in creating a healthier lifestyle for my family (sometimes easier said than done). I’m a strong advocate for limiting screen time and playing both in and outdoors. While getting them (or us) moving, isn’t hard I have found there are temptations and pressure on both myself and kids to consume junk food. The kids get it from advertising & peers and from myself, it was old habits. I didn’t want to deprive the family of “the good foods”, so I always come up with alternatives! I try to ensure my kids are always learning about eating well, by cooking with me.
One of our favorites to cook at that moment is our “KFC” Crispy Popcorn Chicken (listed below). Tastes exactly like the real thing!

“KFC” Crispy Popcorn Chicken Ingredients

1 head of cauliflowercut into bite sized florets

2cups panko bread crumbs
Instructions

Preheat oven to 200C. Dip cauliflower pieces in egg and then roll in panko until fully coated and place on a baking sheet lined with parchment paper. You will need to use your fingers to press on the coating to help it to stick to the cauliflower bites. Repeat until all cauliflower is coated.

Bake for about 20 minutes or until coating is a dark golden brown and crunchy.

While the cauilflower is cooking make the sauce. Add the Hoisin to the Greek Yogurt and stir until combined, chill when finished.
